Swedish "Thin" Pancakes
3 eggs
1 1/4 C milk
3/4 C flour
1T sugar
1/2 tsp. salt
Mix dry ingredients
beat eggs & milk
add dry to eggs
Pour enough batter to barely cover bottom of a fry pan (I use 10" pan). Cook over med heat until batter is not liquid consistency, flip and brown other side.
Serve rolled, or folded, with butter & syrup. Add favorite fruit filling.
Some of my family likes warm cherry pie filling with warmed sour cream and syrup.
Enjoy.... it's one of our favorite breakfasts..... and a memory I have from having breakfast at Grandma's house.
